Can we enable SSO-only login? We want to disable manual invites from the workspace.

Yes! You can enable and disable manual member invitations on a workspace level. It's also possible to enable and disable both SSO-only access to published docs and manual invitations at the same time. Read our documentation on SSO configuration to learn more. Please be aware that selecting the SSO-only configuration will result in the disappearance of the invite button on the teams page.
