Is it possible to customise settings of pipelines (formatting, file structure etc)?

Yes, there is a new Configuration section (available for new exporters only) which allows you to customize settings for your output. Keep in mind that older exporters do not display the Configuration section. More up-to-date and configurable exporters are coming soon!
